PRODUCTION AREA
Made from Chardonnay grapes cultivated on the Sardagna Estate’s sunny hills located at the slopes of Monte Bondone, and Pinot Nero cultivated on the hills of the Valle dei Laghi. Both are auspicious areas for sparkling wines. The particular altitude and orographic position of the vineyards produces an important thermal shock from day to night which has an important role in developing the wine’s bouquet

WINEMAKING TECHNIQUE
After lightly crushing the grapes, fermentation is undertaken at a controlled temperature. The sparkling wine base is then aged in steel tanks. Finally, it undergoes a process of tirage and is subsequently refined and evolved for many years on lees

PERLAGE: very fine and persistent
COLOUR: yellow with golden highlights
NOSE: a complex, refined bouquet, with pleasant fruit notes and hints of yeast
PALATE: dry, pleasantly round with notable structure
ALCOHOL: 12.5%

Excellent as an aperitif, as an accompaniment for appetizers, first courses, and main courses of fish. A perfect pairing for the whole meal!
CONSERVATION AND AGING
Thanks to its long aging on lees, it can be conserved for more than five years from the date of disgorgement
