WINEMAKING TECHNIQUE
Grapes are harvested in the fall once they’ve reached peak ripeness. As the grape bunches are very loose their yield is quite low. The bunches are characterized by a high percentage of smaller than common sized grapes, also known as sweet berries. For this reason, they have particularly concentrated aromas, extracts and sugars. The grapes then undergo a natural drying process, and therefore concentration, directly in the vineyard. After harvest the grapes are are lightly pressed and fermentation is done on the grape skins at a controlled temperature. Finally, the wine is aged in steel tanks and then in the bottle for a few more months
TASTING NOTES
The grape bunch clusters are loose, the fruit pink in colour, and pleasantly sweet
COLOUR: bright red
NOSE: notes of spice, rose petals, and red fruit
PALATE: elegant and enveloping, it’s pleasantly sapid and sweet
ALCOHOL: 13% Vol.
SERVING TEMPERATURE
Pleasant when served chilled at 16° C
FOOD PAIRINGS
Excellent as a dessert wine, to accompany dry pastries, in particular fruit tarts. Perfect with aged or blue cheese. Splendid as a meditation wine
CONSERVATION AND AGING
It maintains its lovely flavor even after a few years of aging, which accentuates its enveloping notes. It stands apart for its intense bouquet that, at the same time, is very fresh on the palate and not excessively sweet
